Cheddar & Jalapeno Popovers

Jalapenos are one of my favorite ingredients to cook with.  I use them in anything I can possibly think of.  These popovers are no exception.  Just make sure to remove as many of the seeds as you can.  It will help reduce the heat while still giving the popovers an amazing flavor.



Ingredients:
  • olive oil
  • 3 eggs (room temp)
  • 1c flour
  • 1c whole milk
  • 1c shredded cheddar cheese
  • 1/3c diced jalapeno (get those seeds outta there)
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/4 tsp garlic powder
  1. Preheat the oven to 400 degrees
  2. Coat a muffin tin with olive oil
  3. In a large bowl, combine all the ingredients except for the cheese with an electric mixer (w/ whisk attachment) until combined.  Stir in the cheese.  Pour into muffin tin (makes 10), filling 2/3 of the way.
  4. Bake 25-30 min.
  5. Let sit 5 min in the tin, then remove and cool on a wire rack. 
Makes 10 popovers.  Try these for your next brunch party, or at dinner in place of the usual bread!
