Cucumber Salad with Homemade Vinaigrette

This makes a great side for dinner or a delicious lunch.  Making your own dressing gives you the confidence of knowing exactly what's in there, and it takes less than 5 minutes.



Dressing Ingredients:
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt & pepper
  • 1 tsp sugar
Salad Ingredients:
  • half of a cucumber, peeled and diced (I prefer the English cucumbers without the seeds)
  • 2 diced roma tomatoes
  • 1/4c chopped fresh basil
  • 1/4c crumbled feta or goat cheese
  • half of a small diced red or white onion
  • salt & pepper
  1. Whisk together all the dressing ingredients and set aside
  2. In a large bowl, combine all your salad ingredients and season with the salt and pepper
  3. Pour the dressing over the salad, stir to coat, and enjoy! 
You could leave the cheese out if you don't care for feta or goat cheese.  I think that it gives the salad a nice zip, and you're only using 1/4c for the whole thing.
