Buffalo Chicken Meatballs

More buffalo love... you could also use ground turkey.  I alternate between turkey and chicken and they are both equally fabulous, because it's really all about the buffalo sauce!



Ingredients:
  • 1lb ground chicken or turkey
  • 1/2c italian bread crumbs
  • 3 tbsp + 12oz buffalo sauce
  • 2 tbsp light cream
  • 1 egg
  • black pepper, celery salt, buffalo seasoning (or cayenne pepper) and italian seasoning
  • 1/3c crumbled gorgonzola or bleu cheese
  • 1/2c+ light ranch dressing 
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the turkey, bread crumbs, 3 tbsp buffalo sauce, light cream, egg and seasoning.  Mix well.  Stir in the cheese.  Form approx 20 meatballs and place them on a parchment paper-lined baking sheet and cook for 30-35 minutes.
  3. In a saucepan, add 12oz buffalo sauce and the ranch.  Heat on low.  Stir in the meatballs, coat with the sauce, and cook for 10 min.
  4. Serve with additional ranch dressing.
These would be great in the crockpot, or you could cook them the whole time in the sauce on the stove top.
