Ingredients:
- 10 bone-in skin-on chicken pieces (I use a combo of thighs and breasts)
- flour
- olive oil spray
- poultry seasoning, salt, pepper, italian seasoning
- a pinch+ of allspice
- half a pint of halved grape or cherry tomatoes
- 12 garlic cloves
- 2 quartered shallots
- 1c white wine
- 1/2c chicken broth
- 3 tbsp dijon mustard
- Preheat the oven to 400 degrees
- Spray a large oven-safe pan or roaster with olive oil spray
- Dredge chicken in flour and add to pan. Season with salt, pepper, italian seasoning, poultry seasoning, and a pinch or two of allspice
- Toss in the tomato, garlic and shallots
- Whisk together the wine, broth and mustard, and pour over the chicken
- Bake 45 minutes, or until the top of the chicken is crispy and the juices run clear
