Dinner Party Chicken

I call this Dinner Party Chicken because it looks pretty darn fancy and your dinner guests will think you spent a lot of time on it.  Truth?  It's good for all occasions- dinner parties, holidays, weeknight meals, etc.  If you're a fan of little prep, lots of taste, and minimal hands-on time and work, then this is for you!



Ingredients:
  • 10 bone-in skin-on chicken pieces (I use a combo of thighs and breasts)
  • flour
  • olive oil spray
  • poultry seasoning, salt, pepper, italian seasoning
  • a pinch+ of allspice
  • half a pint of halved grape or cherry tomatoes
  • 12 garlic cloves
  • 2 quartered shallots
  • 1c white wine
  • 1/2c chicken broth
  • 3 tbsp dijon mustard
  1. Preheat the oven to 400 degrees
  2. Spray a large oven-safe pan or roaster with olive oil spray
  3. Dredge chicken in flour and add to pan.  Season with salt, pepper, italian seasoning, poultry seasoning, and a pinch or two of allspice
  4. Toss in the tomato, garlic and shallots
  5. Whisk together the wine, broth and mustard, and pour over the chicken
  6. Bake 45 minutes, or until the top of the chicken is crispy and the juices run clear
Again- very simple and looks more complex than it is.  Check the blog for great side ideas to serve with the chicken for a fantastic meal!
