Ingredients:
- 4 sliced of light rye bread
- 1 sliced red onion
- 1c of beer (I used Gritty's Christmas Ale due to an overabundance in our fridge)
- 1 tbsp worcestershire
- 1 tbsp+ spicy mustard
- corned beef
- shredded cheddar
- In a saute pan- add some olive oil and a sliced red onion. Cook for 5 minutes on medium. Add 1/3c beer and cook for about 10 minutes. Repeat 2 more times. Once all the liquid has evaporated, stir in the worcestershire and hot mustard. Remove from heat.
- Assemble the sandwiches- spread some spicy mustard on one side of each bread slice. Top with onions, beef and cheese. Bread slices should be non-mustard side facing out.
- Cook in your panini press or skillet, approx 3 min a side.
