Grilled Cheese with Corned Beef and Caramelized Onions

Nothing beats a hot sandwich on a cold day.  I put a fun spin on grilled cheese by adding some meat and caramelized onions.  The recipe below makes 2 sandwiches.



Ingredients:
  • 4 sliced of light rye bread
  • 1 sliced red onion
  • 1c of beer (I used Gritty's Christmas Ale due to an overabundance in our fridge)
  • 1 tbsp worcestershire
  • 1 tbsp+ spicy mustard
  • corned beef
  • shredded cheddar
  1. In a saute pan- add some olive oil and a sliced red onion.  Cook for 5 minutes on medium.  Add 1/3c beer and cook for about 10 minutes.  Repeat 2 more times.  Once all the liquid has evaporated, stir in the worcestershire and hot mustard.  Remove from heat.
  2. Assemble the sandwiches- spread some spicy mustard on one side of each bread slice.  Top with onions, beef and cheese.  Bread slices should be non-mustard side facing out.
  3. Cook in your panini press or skillet, approx 3 min a side.
We had these sandwiches today with cheddar ale soup, which I also posted.  Perfect for a snowed-in day in New England!
