Sierra Nevada Celebration Soup

Paired with today's grilled cheese post is a soup featuring one of my favorite beers ever.  You can use any ale that you like, but SNC is at a price point where you don't hate yourself for using one of the delicious bottles for cooking something amazing.



Ingredients:
  • olive oil
  • bottle of beer (I used Sierra Nevada Celebration)
  • 1 diced yellow onion
  • 2 diced red fresno peppers
  • 1 diced jalapeno 
  • 1/4 diced celery
  • 2 tbsp butter
  • 1/4c flour
  • 1/2 tsp each garlic powder, italian seasoning, cayenne pepper
  • salt & pepper
  • half a package of cooked chopped bacon
  • 2c chicken broth
  • 2c shredded sharp cheddar
  • 1/2c light cream
  • 1 tbsp mustard (hot, sweet or regular- your call)
  • 1 tbsp worcestershire sauce
  • garnish- additional bacon and diced green onion
  1. In a soup pot, add some olive oil and a little of the beer.  Add the onion, peppers and celery and ocok on medium heat for 10 min.  
  2. Add the butter, flour and seasoning, and cook for 1 min, stirring constantly.
  3. Add the bacon, broth, and the rest of the beer and cook for 10 min.
  4. Add the cheese, cream, mustard and worcestershire and cook on low for 8-10 more minutes.  Soup should thicken nicely.
  5. Garnish with additional bacon and diced green onion.
