Ingredients:
- olive oil
- bottle of beer (I used Sierra Nevada Celebration)
- 1 diced yellow onion
- 2 diced red fresno peppers
- 1 diced jalapeno
- 1/4 diced celery
- 2 tbsp butter
- 1/4c flour
- 1/2 tsp each garlic powder, italian seasoning, cayenne pepper
- salt & pepper
- half a package of cooked chopped bacon
- 2c chicken broth
- 2c shredded sharp cheddar
- 1/2c light cream
- 1 tbsp mustard (hot, sweet or regular- your call)
- 1 tbsp worcestershire sauce
- garnish- additional bacon and diced green onion
- In a soup pot, add some olive oil and a little of the beer. Add the onion, peppers and celery and ocok on medium heat for 10 min.
- Add the butter, flour and seasoning, and cook for 1 min, stirring constantly.
- Add the bacon, broth, and the rest of the beer and cook for 10 min.
- Add the cheese, cream, mustard and worcestershire and cook on low for 8-10 more minutes. Soup should thicken nicely.
- Garnish with additional bacon and diced green onion.
